This wine is so called ‘slow’ as it is crafted the wild way – old vine fruit, fermented with wild yeast found naturally on the grapes, not in a packet. This magical transformation takes at least six months, whereas some wines can go from vineyard to bottle in just 3 weeks! Wild yeast fermentation is key to this benchmark Chenin Blanc.
Whiffs of freshly baked bread, honey and dried apple followed by a rich mouthful of creamy lemon fruit. A well suited match with seafood, risotto or herby roast chicken but can also handle spice very well.
