Quinta do Piloto have a secret ingredient that makes this wine not only incredibly complex and delicious, but also unique! The family winery has a tiny cellar area tucked away containing a handful of 100 litre chestnut barrels, in which they age this special wine. As the barrels are very old they add almost no wood influence to the wine but they contain what is called ‘mother liqueur’. This is a tiny proportion of wine that is never removed and contributes to every wine that is aged in the barrel (similar to a solera system for making Sherry in Spain) and adds concentration and complexity to the wine.
Rich and decadent with a textural mouthful of incredibly rich dried and candied fruits yet remarkable freshness… a sheer delight!
