The Serra Mãe is made from 100% Castelão, grown on the free-draining, sandy soils West of Palmela. It was naturally fermented (no added yeast), and then subsequently aged, in concrete vats. The importer had the opportunity to bottle their own interpretation of this grape, and they selected this wine because they think it displays a pure sense of variety and place. The wine has aromas of concentrated black cherry and bramble fruits, some green herb, rustic spice and black olive. The palate has lucious ripe black fruits, spicy smokey with a fresh and juicy texture from start to finish. Its fresh acidity is a perfect match for slow-roast lamb, toad in the hole or Spanish tapanade. This grape (Castelao) is an underdog in the Portuguese wine world and you don’t often see it as a single varietal, but when you do….. wow!
